Finding a substantial breakfast when traveling as a vegan can be tough. Being stuck w/ peanut butter on toast, maybe some oatmeal if possible…Breakfast however can very easily be veganized and I always appreciate a tofu scramble on the menu, pancake options, veggie sausage, etc. But the best is when you have the WHOLE menu to choose from. @dcvegan came through with this one, wild mushroom omelette.🌿 And the great thing is about vegan restaurants, they’re for EVERYBODY 💚🍳

Some tips on getting more than 30 different plants in per week!🌿

💚Ingredient prep a few plant foods at the beginning of the week to create dishes: a grain, raw, roasted or steamed veggies, a baked tofu, etc.
💚Have cans of beans, chickpeas, or cooked lentils on hand.
💚Pack a dressing with various plants: ex: green goddess- tahini, parsley, mint, cilantro, lemon, garlic.
💚Use a sweet potato as a base for lunches. Add greens, veggies, protein, dressing, sauerkraut, etc.
💚Add seeds, fruit, etc, to oats: chia seeds, berries, pepitas, ground flax, hemp seeds
💚Have greens washed, properly stored, and ready to go!
💚Make fresh juices or smoothies
💚Add veggies to tofu scrambles, a great way to check off multiple plants first thing in the morning.
💚Go to farmer’s markets. You’ll be forced to embrace the ever changing array of available produce.
💚Keep frozen fruits or vegetables on hand

This week I’ve hit an average of 130g. plant protein and 50g of fiber a day. Protein is the loudest word on the internet right now and unfortunately there’s not always a lot of follow-up information outside of hitting protein goals. When focusing only on protein (especially animal protein) the fiber tends to lack. Plant protein can not only be incredibly nutrient-dense but can be fibrous as well! Salad ingredients below:

-blend in food processor. Form egg shapes on a parchment paper-lined plate. I made big ones so it only made 7 or 8. Freeze for about 20+ min.
-melt down one cup of non-dairy chocolate chips w/ 1 tsp. coconut oil. Dunk each egg in. They should harden very quickly, you can drizzle a design after they cool if you’d like. Sprinkle coarse sea salt on right away. Chill in fridge for another 20+ min. and enjoy!

PB eggs 🪺

🐣1 c. almond flour
🐣3/4 c. peanut butter
🐣1/4 c. maple syrup
🐣1/2-1 tsp. vanilla
-blend in food processor. Form egg shapes on a parchment paper-lined plate. I made big ones so it only made 7 or 8. Freeze for about 20+ min.
-melt down one cup of non-dairy chocolate chips w/ 1 tsp. coconut oil. Dunk each egg in. They should harden very quickly, you can drizzle a design after they cool if you’d like. Sprinkle coarse sea salt on right away. Chill in fridge for another 20+ min. and enjoy!
